Stuffed Dates with Apricots

One of the young adults on the Young Minds retreat recently asked if there were any party snacks in the cookbook? There are few recipes that would work nicely, but not a chapter devoted to them. Which got me thinking. why not include one in Volume Two? (Yes, Volume Two could happen. Emphasis on “could” mind.) We will see!

This little dairy-free ditty is based on one of Tenkeis favorite party snacks; stuffed dates (that are usually filled with sweet cream cheese).  At the first try-out Marloes thought they tasted lemony, in spite of the fact there was no lemon in them! With honey in the second Julie agreed they rose to another delectable level.

Ingredients

50 g (about 8) dried apricots
20 g (about 16) roasted, unsalted almonds

Dash of ground cardamom
2 teaspoons honey
About 12 dates

Method

  • To make the filling, put the apricots, almonds, and cardamom in a food processor and whizz to a paste-like consistency.
  • Stir in the honey.
  • Slice the dates lengthwise and take out the pits without breaking the fruit.
  • Stuff each date with about 1 teaspoon of the apricot and almond filling. Drizzle with a little more honey if you like.
  • Arrange on a festive platter.
