Oh, I love the colours of white creamy feta cheese marinated in olive oil, and laced with herbs and whole red pepper corns. Here is a salad dressing based on the same theme that we made one fine summers day.
100 g (⅔ cup crumbled) feta cheese
175 ml (¾ cup) mild natural yogurt
3 tablespoons olive oil
½ teaspoon red pepper corns
½ teaspoon thyme
½ teaspoon oregano
½ teaspoon rosemary
½ clove garlic, pressed
¼ teaspoon lemon zest
Salt and pepper to taste
- Place all the ingredients in a mixing bowl and whiz with an immersion blender.
- Alternatively, mash the feta cheese well, grind the red pepper corns in a pestle and mortar and combine with the remaining ingredients.
